Egg and Chorizo Breakfast Taco

I’m pretty sure tacos are my favorite food of all time. I could eat breakfast, lunch, and dinner in some form of taco. Flour and corn tortillas do not lend themselves to the keto/low carb lifestyle, however. I have recently discovered and fell in love with these Egg Thins egg white and cauliflower wraps! I have used them in so many ways, including these chorizo and egg breakfast tacos.

It’s super simple to cook your chorizo in a skillet, then push it to the size and break in a bunch of eggs. Mix it up and let cook together.

Once fully cooked, assemble your tacos. I used 2 egg thin wraps straight out of the package to make sure everything stayed put! I like to add some pico de gallo, crumbled cotija cheese, and Cholula hot sauce. You can make it your own here with any cheese you like, cilantro, etc!

A low carb Mexican inspired Breakfast taco with delicious spicy chorizo, your favorite toppings, and an Egg Thin "tortilla"

Ingredients

  • 1 pkg. Chorizo
  • 6 eggs
  • Egg Thin wraps
  • pico de gallo
  • cotija cheese
  • hot sauce

Instructions

In a skillet, cook the chorizo until done, then push to one side of the pan.

Break the eggs in the cleared size and cook until almost done.

Stir the chorizo into the eggs and combine them. Continue cooking until the eggs are done.

Assemble tacos on Egg thin wraps, or tortilla substitute of your choice with your favorite toppings.
